Paper-Wrapped Chicken

Grandma's paper-wrapped chicken is makansutra good!

***RECIPE***

INGREDIENTS: 1.5 kg chicken mid wings or drumstick 100 gm ginger - cut into fine strips 50 gm spring onion cut into two inches strips 4 tbsp water 2 tsp salt 1 tsp vetsin 1 tsp sugar 1 tbsp light sauce 1 tbsp oyster sauce Half tsp pepper 2 tbsp cooking oil 2 tsp sesame oil 1 tbsp Chinese wine 1 tbsp ginger juice 1 tbsp cornflour

METHOD: Season chicken with above seasonings for one hour. Cut greaseproof paper or wilton parchment paper into squares and big enough to wrap. Wrap seasoned chicken into the paper with ginger and spring onion strips. Fold like an envelope . Heat oil in wok and deep fry chicken packets in hot oil for about 8 - 10 minutes. Drain and serve hot.
