Glutinous rice in lotus leaf
***RECIPE***
INGREDIENTS: 600 gm glutinous rice 1 tsp sugar 1 1/2 tsp salt 1 1/2 tsp oil 500 gm green beans 1 1/2 tsp 5 spice powder 1 tsp salt Half tsp ketumbar powder 1 tbsp oil 300 gm roast pork 150 gm dried prawns 100 gm mushrooms 2 Chinese sausage 10 salted eggs - cooked Scallops soak and steam for 15 mins - optional 4 dried lotus leaves - soaked in hot water and pat dry
METHOD: Soak glutinous rice for two hours. Drain and Add in salt,sugar and oil and 1 bowl chicken stock. Steam the soaked glutinous rice for 45 mins over medium heat. Soak green beans for two hours. Drain and add in 5 spice powder, salt, ketumbar powder and oil. Steam for 30 mins . Slice roast pork. Wash dried prawns . Soak and fry with ketumbar powder, garlic and oil. Mushrooms - boil with oil and salt till soft. Take a fistful of rice and place it in the centre of a lotus leaf. Pat it down.place some green beans on top and fillings over it. Top with another layer of green beans and a layer of glutinous rice. Fold the sides of the lotus leaf towards the centre. Roll and tuck the ends into the fold. Steam for 15 mins over medium heat.
