Fish Congee with Peanuts

泥斑 fish congee with peanuts........ Cantonese congee - Simply BEST !

***RECIPE***

INGREDIENTS: 1 cup rice 1 bowl peanut 2 pcs dried Scallops 1 fish 8 cups water Garnish Shallots Green onions You tiao METHOD:

Wash rice. Rinse and soak with enough water. Put in freezer for 4 to 5 hours. Peanuts rinsed and soaked. Remove skin. Boil in boiling water till soft. Soak Scallops in hot water. Shred it. Fry fish till fragrant. Cool and remove flesh. Heat oil with garlic , add in fish bones and fry till fragrant. Add in hot water. Sieve and use to boil congee stock. Boil rice with congee stock till soft. Add in soft peanuts, Scallops and fish meat. Serve congee with green onions? shallots and pepper. Add you tiao and serve .
