Cuttlefish Rice

One pot meal - cuttlefish rice

***RECIPE***

INGREDIENTS: 50 gm dried shrimps 4 dried mushrooms 1 Chinese sausage - skin removed and diced 150 gm pork belly or chicken fillet - diced 1 small piece dried cuttlefish - soaked and cut finely. Season with a tsp ginger juice and wine. 1 tbsp garlic 1 tbsp cut onions 1dried scallop (conpoy) Half tsp salt Pepper Chinese wine 1 tsp dark soya sauce 1 tsp light Soy sauce 2 1/2 cups rice 3 cups water 2 tbsp cooking oil METHOD: Wash rice and set aside Soak dried mushrooms until soft. Rinse and cut into small cubes Rinse dried scallop. Soak in hot water and shreds. Rinse dried shrimps and soak in water Heat oil and fry the garlics and shallots until golden brown. Add in the scallop,dried shrimps, cuttlefish, Chinese sausage and mushrooms.add in pork and seasonings to taste. Cook rice with a dash of oil and salt in rice cooker.when a lot of bubbles , add in cooked ingredients. When rice is cooked, stir rice with ingredients and mixed well. Garnish with spring onion and serve.
