CRISPY EGGPLANTS

***RECIPE***

INGREDIENTS:

3 tbsp rice flour 1 tsp. salt Breadcrumbs 1 egg 1 eggplant METHOD: Mix rice flour and salt in a bowl Beat egg Breadcrumbs Cut eggplant into long thick strips Soak eggplant in mixed flour and dip in mix egg mixture, dip into mixed flour and back into egg mixture.

Roll over the Breadcrumbs and deep fry ' till golden. Dip with wasabi sauce or Cook garlic ,butter , chilly and curry leaves. Toss in fried eggplant .add salt and pepper to taste. Or sprinkle black pepper and salt to fried eggplant and serve.
