BLACK PEPPER CRABS
***RECIPE***
INGREDIENTS: 1 kg crabs 2 tbsp cornflour Oil 2 tbsp butter 3 tbsp black pepper 3 tbsp hua teow wine Seasoning 8 tbsp chicken stock 2 tbsp oyster sauce A dash of dark soy sauce Curry leaves Crispy lettuce leave - optional Garnishes
METHOD: Chopped spring onion Cut fresh crab. Wash andn pat dry. Coat with corn flour .shake off excess. Heat oil in a large wok over high fire. When smoking hot, deep fry crabs till cooked n brown. Heat butter in clean wok over medium fire. Add in deep fried crabs. Add in curry leaves and mixed Seasoning and toss for 3 mins.thickened with cornstarch mixture. Add in wine . Pour over crispy lettuce .Sprinkle with spring onion n serve.
